This is one of the more bucolic links in the chain of first-class steak houses. And it's handily among the top half-dozen spots for a steak on Long Island.

Restaurants come and go in the Hamptons every summer. But, year after year, The Palm has to be one of the toughest reservations in town. And with good reason.

The formula is basic. Have a shrimp cocktail, or a crabmeat cocktail. Try the sliced onions and tomatoes. Then, have the sirloin steak, the strip steak, or one of the excellent broiled lobsters. You'll do fine with the sliced "steak a la stone," the chopped steak, and the lamb chops, too.

Cottage fries, hash browns and creamed spinach are the mandatory side dishes.

In the unlikely event that you have room for dessert, the cheesecake is good.
