Indian Cove rests at the Shinnecock Inlet, offering fine water views to go with the French-accented menu that emphasizes seafood. The modern-looking spot has undergone many chefs over the years. But what keeps diners returning is the combination of location and fresh fish and shellfish. You could begin with mussels steamed in white wine, lobster bisque, local oysters mignonette, or the crab cake. Or veer Italian with fried calamari, tomatoes and mozzarella; Californian, with nut-crusted goat cheese; Asian, with the house spring roll, filled with lobster and mushrooms. Main courses include steamed or broiled lobster; lobster "bon vivant," with crab-and-shrimp stuffing; surf-and-turf, with filet mignon and lobster tail; grilled salmon finished with lemon-mint vinaigrette; and local duck, with blueberry-cabernet sauce and ginger reduction. For dessert, consider creme brulee and bread pudding.
