Polo is one of Long Island's most opulent and expensive restaurants. Under chef Steven De Bruyn, it's also one of the best for new American cooking. The dining room is a very comfortable, traditionally appointed place, defined by excellent service. It's ideal for business and upscale socializing. De Bruyn's menu changes seasonally, but it's consistently creative, inviting, and worth sampling any time of year. His foie gras tasting, crisp-fried quail, and bamboo-steamed oysters with a tomato-fennel confit are typical openers. Main courses could include wild king salmon paired with Savoy cabbage, roasted pears and caramelized sunchokes, roasted lobster medallions with a gratineed fennel and claw-meat fricassee with warm spices, a two-way presentation of duck with breast and herbed spaetzle and duck leg with braised fennel and rhubarb-fig compote, and a diverting mushroom tasting. Desserts are excellent: clementine cheesecake with plum salsa and coconut sorbet, roasted pineapple with lemon verbensa granite and Frangelico foam, chocolate-seven grain bread pudding with honey-and-clove braised pears and Guinness ice cream, and spiced chocolate cake with citrus salad, creamsicle and peppermint sauce. You'll also want to visit fr the traditional tea and brunch.
